Fabulously Frugal Food: Beefaroni

My mom’s beefaroni recipe is easily one of my most prized possessions – I LIVE on the stuff. Before you turn your nose up and search for something that looks a little more appealing, at least do yourself a favor and read the remainder of this post – this meal can save you significant time and money every single month.
This is my absolute FAVORITE comfort food. It’s cheap, easy to make, and as an added bonus, it’s even good for you. At least once a month, I’ll make a giant batch, proportion it into individual servings, and store it in the freezer for super quick meals whenever I don’t feel like cooking. You’ll probably have most of the ingredients already laying around the house and in just about an hour or so, you’ll have a complete, nutritious meal that your family will rave about. This is a recipe that has literally been passed down by generations – I believe my grandmother created it, passed it down to my mom, and now, I could not be happier to share it with you. Enjoy.
Ingredients
- 1.5 lbs of lean hamburger
- 1 lb of elbow macaroni
- 1 medium onion
- 1 green pepper
- 1 tbsp of minced garlic (I usually end up tripling this amount, easily)
- 3 cans of diced tomatoes
- 2 small cans of tomato sauce
- salt, pepper, and garlic to taste
- V8 juice (optional)
Directions
- Brown the hamburger and drain
- Boil the noodles and drain
- Dice onion and pepper, mix with meat, and cook approximately 15 minutes
- Pour everything into a large pot
- Simmer for 45 minutes, stirring occasionally
- If beefaroni begins to dry out, add V8 sparingly
